Salted tomatoes in jars for the winter
It’s better to start with calculations: how many tomatoes, salt, spices, and water are needed for one 3-liter jar. A good recipe should indicate this. However, due to the fact that the shape and size of vegetables cannot be the same for everyone, there will still be discrepancies. Therefore, it is always better to take a little more food than you need. Here, as they say, it’s better to be on the safe side.
The final stage is different for everyone. More often it is recommended to cover the jars with a lid and leave them to ferment for a week or two in a dark place with a temperature of at least 15-18 degrees. When the fermentation process is over, put it in the refrigerator or cellar, where it is no higher than 2C. This doesn't mean they will be ready. As a rule, this will happen within a month. If necessary, the surface of the brine will need to be cleaned of mold. And add fresh.
