Lightly salted tomatoes with garlic in a jar
Step-by-step preparation
STEP 1
How to make lightly salted tomatoes with garlic in a jar? Prepare all products according to the list. Which tomatoes are better to choose? Tomatoes of any variety are suitable for the recipe; the main thing is that the tomatoes are dense, with thick skin, ripe and juicy. Make sure there are no damage or dents on the fruit.
STEP 2
Wash the tomatoes well and pierce them in 2-3 places where the stem is attached using a toothpick. Don't make too deep punctures. Peel and rinse the garlic. Adjust the amount of garlic to your taste.
STEP 3
Slice each clove into thin slices. Rinse the dill. If you have dill umbrellas, be sure to use them for pickling. Umbrellas will give the finished tomatoes a special touch.
STEP 4
Wash the jar thoroughly. You can use baking soda, then rinse well several times in clean cold water. Place several sprigs of dill and a third of the garlic slices on the bottom of the jar.
STEP 5
Then place the tomatoes, dill and garlic into the container.
STEP 6
Next, add the tomatoes again.
STEP 7
The final layer is greens and garlic.
STEP 8
Place chili peppers in a jar and adjust the amount according to your taste preferences. You can add more of it and get spicy lightly salted tomatoes, or add very little or omit it altogether. Add peppercorns.
STEP 9
Prepare the brine. Boil water in a saucepan, add salt and sugar. When the salt and sugar have dissolved, remove the pan from the heat and cool the brine to room temperature.
STEP 10
Fill the jar to the top with brine. Close with a nylon or screw lid and leave at room temperature for a day, then put in the refrigerator.
STEP 11
On the second or third day, lightly salted tomatoes are ready. You can serve it to the table.
STEP 12
The longer tomatoes sit in the refrigerator, the saltier they become. I especially like tomatoes on the 4-5th day.
