STEP 1
How to make pickle soup for the winter from fresh cucumbers with pearl barley? Prepare the ingredients according to the list. Rinse the cereal thoroughly and soak in cold water for an hour. Then drain the water, rinse the cereal again, fill it with a new batch of clean water and put it on the fire. Cook the pearl barley until half cooked, for 20 minutes over low heat. Drain the water and place the pearl barley into a deep saucepan.
STEP 2
Meanwhile, prepare the vegetables and wash them. Peel the carrots and grate them. Place in a saucepan with pearl barley.

Peel the onions and cut into small cubes and place in a saucepan.
STEP 4
We came to cucumbers, they do not necessarily have to be in beautiful presentation; those that are not suitable for pickling will also work, the main thing is that they are fresh. Cut the ends off both sides of the cucumbers and cut them into small cubes.

Add them to the pan with the other ingredients.

Peel the bell pepper from the core with seeds, cut the pulp into small cubes. Do the same with tomatoes. Peel the garlic cloves and finely chop with a knife.
STEP 7
Pour water into the pan with cereal and vegetables. Add sugar, salt. Mix everything thoroughly and put on fire. When the mixture boils, reduce the heat to low and simmer for about 15 minutes, then pour in the vegetable oil, let the mixture boil and simmer for another 5 minutes. Now add the bay leaf and pour in the vinegar. Boil vegetables and cereals for 5 minutes from the moment they start boiling.
STEP 8
While the vegetable stock for the pickle is cooking, you need to prepare the jars. The jars should be of such a volume that the contents of the entire jar can be immediately used to cook the soup. Wash the jars with soda and sterilize them in the oven; 0.5 liter jars need to be sterilized for 10 minutes at 150 degrees. Boil the lids or sterilize them together with the jars in the oven. Or sterilize the jars in another convenient way.
STEP 9
Fill sterile jars with the product up to the shoulders, cover with lids and sterilize in a pan filled with water. Place a cloth on the bottom of the pan to prevent the walls of the jars from bursting when heated. Sterilize 0.5 jars for about 10 minutes from the moment the water boils in a saucepan over low heat. Roll up the jars with lids and store them in a cool place. Bon appetit!
