Finger-licking tomatoes in their own juice
Step-by-step preparation
STEP 1
How to prepare tomatoes in their own juice for the winter? Prepare all ingredients. What tomatoes to use for harvesting? Absolutely any tomatoes will do. Select overripe and wrinkled ones separately; they will be used for making tomato juice. Select smaller elastic tomatoes and those that are denser; we will put them whole in jars. Wash the tomatoes. STEP 2
Pass the tomatoes selected for juice through a juicer. I like to use a meat grinder or blender in this case. Pour the juice into a saucepan, add sugar and salt. Bring everything to a boil, stirring occasionally. Taste it. If necessary, add the missing component. Add salt and sugar in portions. Different varieties of tomatoes have different degrees of sweetness, so you may need more or less salt or sugar.
STEP 3
On average, about 2 tbsp is obtained for 9-10 liters of juice. salt and 3-4 tbsp. Sahara. Place whole tomatoes in sterile jars. If desired, add bell peppers, garlic, fresh herbs, hot peppers, etc. to each jar.
STEP 4
Fill the jars with boiling tomato juice to the top.
STEP 5
Line the bottom of a wide pan with a thin towel to prevent the jars from bursting when heated. Place the jars in a saucepan, fill with warm water up to the hangers, cover with sterile lids and place on high heat. After boiling, reduce the heat slightly and sterilize 0.5 liter jars for 10-15 minutes, 1-1.5 liter jars for 15-20 minutes, 2-3 liter jars for 20-30 minutes.
STEP 6
Close the jars with lids using a special key. Turn the top upside down and wrap it in a warm towel. After complete cooling, remove the workpiece to the cellar.
STEP 7
