Recipes for dishes made from pearl barley appeared centuries ago; the Russian nobility were the first to taste treats made from this grain. The dish was served at the ceremonial table and was called “Royal”; its grains resemble pearls in appearance - these are the adored decorations of the spouses of emperors. Later, pearl barley became a constant food for field soldiers and was called “peasant rice.” The role of unfortunate cooks was played by soldiers who did not finish cooking the porridge; it turned out hard for them. Hence the unfair bias towards a truly nutritious product. Recipes for pearl barley can be simple, but there are also real culinary masterpieces. If you cook it with skill, you will get a delicious dish, and not the usual hard “shrapnel”. You can cook soup with porridge, with vegetables, with pickles, with dried fruits. Boiled pearl barley is served with pork, baked in the oven or made in a pressure cooker, with goulash, usually topped with plenty of tasty gravy. You can also serve mushrooms or stew as a side dish.
