STEP 1
How to cook chicken soup with barley? Prepare the necessary products. You can use any part of chicken for this soup. I took a soup set for a richer broth. Take filtered or bottled water. This will help avoid an unpleasant aftertaste.
STEP 2
Rinse the chicken under running water and place in a saucepan. Fill with clean water and bring the future broth to a boil. Skim off the foam and add the bay leaf. After five minutes of cooking, remove the leaf so that it does not become bitter. The bay leaf can be added before the end of cooking, but I prefer it at the beginning. Cook the broth for about 20 minutes.
STEP 3
Rinse the pearl barley well and soak in water for 30 minutes. It’s even better to soak the pearl barley overnight, so it will cook faster. After soaking, fill it with water so that it is 3 cm higher than the cereal and cook for 20-25 minutes until half cooked.
STEP 4
Peel the washed potatoes, wash the tubers and cut them into pieces.
STEP 5
Remove the chicken from the broth and cool it slightly. Strain the broth, put in the potatoes and the barley, washed after boiling. Bring the soup to a boil and cook until the potatoes are done.
STEP 6
Peel the onion and cut into small cubes.
STEP 7
Peel the washed carrots; it is most convenient to do this with a vegetable peeler, but you can also use a regular knife. Grate the carrots on a medium grater.
STEP 8
Fry onions and carrots in heated vegetable oil for 5-7 minutes until the vegetables are soft.
STEP 9
Rinse the dill sprigs with water, dry lightly and finely chop.
STEP 10
Remove the meat from the boiled chicken parts and disassemble it into large fibers or cut into arbitrary pieces.
STEP 11
Add fried vegetables, meat and dill to the soup. Add salt to taste. At this stage you can add your favorite spices. Boil the soup for another 5-7 minutes and remove from heat. Cover the pan with a lid and let sit for 15 minutes.
STEP 12
Delicious chicken soup with barley is ready! Serve it hot with fresh vegetables or pickles. Bon appetit!
