I decided to diversify the Lenten menu with pearl barley. I increased the portion to two glasses of cereal in order to prepare two dishes at once) I have never prepared pearl barley this way. I usually boil it in a lot of water and then rinse it with cold water. But after this, the pearl barley becomes a little “bluish”. I believed with all my heart in this recipe and prepared everything according to the author’s recommendations. Just didn't add butter. The pearl barley was pre-soaked for an hour, then the liquid was evaporated over low heat. The barley turned out really crumbly! The porridge turned out wonderful, tasty and filling. And I liked the look, the grains were light and pretty. I mixed the second part with fried onions, carrots and champignons. I don't soak pearl barley. I first fry the pearl barley in a dry deep frying pan until golden brown, and then pour in water, add finely chopped onions to the barley and cook until tender. Salt to taste. Season with butter.
