    The whole secret of the taste of barley porridge is in its preliminary frying in a dry frying pan. There is no need to wash the cereal; just pour it straight into a hot, dry frying pan.

    Pour water for cooking porridge into a saucepan, add salt and put on fire.

    Stirring continuously, fry the cereal over medium heat for 10 minutes. During the frying process, the barley should “tan” evenly.

    Pour the toasted hot barley from the frying pan into the boiling water in the pan. Important!: the cereal must be hot, but not red-hot, otherwise, when poured into boiling water, it will create a volcano effect, which can lead to burns. Let the fried cereal stand for 2-3 minutes so that its temperature approaches 100 degrees and only then carefully pour into boiling water.

    Cook the barley porridge until tender over low heat, covered, stirring occasionally, for about 20 minutes. When the water has boiled away, the porridge is ready.

To prepare crumbly barley porridge in water, I washed the cereal in cold running water and then dried it in a frying pan. I just didn’t fry it until golden brown. I poured the cereal into boiling water and cooked for about 25 minutes until the water boiled away. Then I added the oil and left it to cool in the pan with the lid closed. The barley porridge turned out really crumbly and very tasty!

Carefully! When you pour hot barley from a frying pan into a pan of boiling water, you get the effect of a volcano. The contents of the pan begin to bubble sharply and intensely, spilling over the edges onto the stove. The cereal should probably be cooled before pouring into the pan. Unfortunately, this is not indicated in the recipe.
