Salad with pearl barley and vegetables

STEP 1
How to prepare a salad for the winter with pearl barley and vegetables? Prepare the necessary ingredients. Rinse the pearl barley well, add water and leave for 2 hours.
STEP 2
Peel the onion and cut into half rings and place in a pan in which you will cook the pearl barley with vegetables. An article about saucepans will help you choose the ideal pan, link at the end of the recipe.
STEP 3
Wash the carrots, peel and cut into strips. Place the chopped carrots and onions in a saucepan.
STEP 4
Pour water and vegetable oil into the vegetables.
STEP 5
Wash the tomatoes and remove the skins from them. To do this, make a cross-shaped cut on them and pour boiling water over them for 1-2 minutes. After this, the skin can be easily removed.
STEP 6
Grind the tomato pulp in a blender. You can pass the tomatoes through a meat grinder; in this case, there is no need to peel them.
STEP 7
Place the pan with the onions and carrots over medium heat, bring to a boil and, stirring, cook for about 10 minutes.
STEP 8
Add the washed pearl barley to the pan with the vegetables and mix everything well. Cover the pan with a lid and simmer over low heat for about 15 minutes.
STEP 9
Add tomato puree to the barley with vegetables and mix well.
STEP 10
Wash the bell pepper, cut into strips and add to the rest of the vegetables. Mix everything well.
STEP 11
Add salt and sugar and stir. Cook the salad for 20-25 minutes over low heat, stirring occasionally.
STEP 12
10 minutes before the end of cooking, add ground black pepper, dill, vinegar and bay leaf. Prepare salad jars (I used liter jars). To do this, wash them with soda and sterilize them in any way convenient for you. Boil the jar lids for 3-5 minutes. STEP 13
Place the prepared salad in sterilized jars and close the lids. Turn the jars upside down and leave them like that under a warm blanket or rug until they cool completely. Store the salad in a cool place. Happy cooking and bon appetit!
