    Wash the carrots, peel and cut into strips. Place the chopped carrots and onions in a saucepan.

    Pour water and vegetable oil into the vegetables.

    Wash the tomatoes and remove the skins from them. To do this, make a cross-shaped cut on them and pour boiling water over them for 1-2 minutes. After this, the skin can be easily removed.

    Grind the tomato pulp in a blender. You can pass the tomatoes through a meat grinder; in this case, there is no need to peel them.

    Place the pan with the onions and carrots over medium heat, bring to a boil and, stirring, cook for about 10 minutes.

    Add the washed pearl barley to the pan with the vegetables and mix everything well. Cover the pan with a lid and simmer over low heat for about 15 minutes.

    Add tomato puree to the barley with vegetables and mix well.

    Wash the bell pepper, cut into strips and add to the rest of the vegetables. Mix everything well.

    Add salt and sugar and stir. Cook the salad for 20-25 minutes over low heat, stirring occasionally.

    10 minutes before the end of cooking, add ground black pepper, dill, vinegar and bay leaf. Prepare salad jars (I used liter jars). Good day! The salad turned out very tasty, thanks for the recipe. We love pearl barley soup, which has the same ingredients, but instead of pepper there are potatoes and broth, of course. For the winter, this salad is like a hearty cold appetizer.
