Pickled tomatoes in jars

Incredibly tasty and simple! Great summer preparation! Our grandmothers also made pickled tomatoes in jars for the winter. And every summer I make sure to close at least a couple of jars of these tomatoes. In the cold season, they are good served with mashed potatoes or other side dishes.

  1. STEP 1

    STEP 1

How to prepare pickled tomatoes in jars for the winter? To begin, prepare all the ingredients according to the list.

  2. STEP 2

    STEP 2

Cut the clean carrots into long pieces, cut the hot capsicum into rings, leave the garlic cloves whole. Be sure to prepare chopped horseradish roots and a sprig of cherries. For herbs, take celery greens.

  3. STEP 3

    STEP 3

Take ripe tomatoes and rinse. I prefer to ferment ripe red or brown tomatoes.

  4. STEP 4

    STEP 4

Make 10 liters of brine in warm water, dissolve 250 grams of coarse salt and 250 grams of sugar.

  5. STEP 5

    STEP 5

Place spices in a jar, barrel or bucket: hot peppers, celery, garlic, horseradish, cherry sprig. I prefer to ferment tomatoes in three liter jars.

  6. STEP 6

    STEP 6

Place the tomatoes tightly, alternating with carrots.

  7. STEP 7

    STEP 7

Fill all the “beauty”, laid out in jars, with brine and close with nylon lids. Approximately 1-1.5 liters of brine are poured into one three-liter jar, depending on the size of the tomato and the density of the ingredients.

  8. STEP 8

    STEP 8

Leave the jars warm for the fermentation process in the kitchen. Pickled tomatoes will be ready in about a month. After this, transfer the jars to a cold place (basement, cellar). Good luck with your preparations!

And now winter has finally arrived and pickled tomatoes are used. I cooked tomatoes using this recipe in the summer. A very simple and fast preparation method. I put everything in a jar, filled it with marinade and wait) Pickled tomatoes in jars for the winter turned out mega tasty. The marinade is very aromatic and spicy due to pepper, celery, carrots and horseradish. The result was some kind of carbonated tomatoes, similar to barrel tomatoes. Very tasty, not sour, but spicy and the aftertaste is so spicy in the mouth. Just right for us! Spicy, carbonated, it makes your cheekbones cramp up. Super! The taste is excellent. The carrots came out crispy and aromatic, I didn’t try horseradish) We ate it with potatoes, the perfect combination. Great recipe! I'm putting it in my piggy bank. Now I will prepare pickled tomatoes in jars for the winter using this recipe and more! And I recommend it to everyone! This is the most delicious!

An easily accessible recipe for everyone! I did everything according to the recipe, the only thing was that I gave up the celery and replaced it with onions. Nevertheless, the tomatoes turned out to be very tasty and juicy. I advise you to add bell and black pepper (in peas). Then you can season any salads with brine. Practical, for all times! Thanks to the author for this opportunity! :)
