Step-by-step preparation
Cooking time: 6 hr
STEP 1
We choose ripe, not large tomatoes, and wash them well!
STEP 2
Cut in half and remove the stem.
STEP 3
Place on a wire rack lined with parchment.
STEP 4
A regular standard rack holds two kilograms of chopped tomatoes.
STEP 5
Lubricate them with olive oil, sprinkle with salt and sugar to your taste.
STEP 6
Place the grill in a slightly open oven preheated to 90-100 degrees! We dry the tomatoes for 5-6 hours.
STEP 7
We taste the tomatoes for salt.
STEP 8
Pass the garlic through a press.
STEP 9
Place the sun-dried tomatoes, garlic and dried herbs in sterile jars layer by layer, adding salt if necessary.
STEP 10
Add olive oil to tightly packed tomatoes so that there is no air in the jar! Fill to the very brim!
STEP 11
Close tightly with a sterile lid. Can be stored at home.

A very good tip is to line the wire rack with parchment, as the tomatoes shrink greatly in size during cooking and can fall through the bars. And I also liked the combination of spices in this recipe - oregano, thyme and basil. The only disadvantage of this dish is that it is expensive - to prepare a small jar I needed 2.5 kg of tomatoes and expensive olive oil, more quantity than in the recipe. But the result, of course, is magnificent; nothing can compare with sun-dried tomatoes. I didn’t sterilize the jar or lid; we don’t keep such a delicacy for a long time. The recipe is excellent, I recommend it!
