    How to pickle green tomatoes in Armenian style for the winter? First, prepare all the necessary ingredients. You can also use red tomatoes, but preferably green ones, not too large so that they fit well in the jar. Instead of parsley, you can add cilantro or basil, it will also turn out delicious.

    Wash the parsley and chop finely, peel the garlic and chop it too. Wash the peppers and, if desired, remove the seeds, then the tomatoes will not be very spicy. Also finely chop the pepper with a knife.

    Place parsley, garlic and hot pepper in one cup and mix well.

    Wash the green tomatoes well and cut each one crosswise in the middle, but not completely, so as not to fall apart, and fill with the prepared spicy mixture. You can do this with a spoon, but it’s more convenient with your hands, then be sure to wear gloves so that the pepper doesn’t burn your hands.

    Carefully place the stuffed tomatoes in a clean jar; a 500 ml jar is suitable for this amount of ingredients.

    Prepare the brine, dissolve salt and vinegar in water, bring to a boil in a saucepan.

    Fill the jar with tomatoes to the top with the prepared brine, cover with a lid.

    Place a cloth or paper towel in a pan of water, place the prepared jar on top and sterilize for at least 10 minutes.
