    Let's prepare the ingredients for canning green tomatoes for the winter, the quantity is indicated for two 0.75 liter jars. Wash the vegetables thoroughly. Green tomatoes contain a dangerous substance called solanine. It is better to take fruits that are not dark green, but slightly brown, and even better, soak them in a salt solution for 2 hours; the salt will draw out the solanine from the vegetables. Drain the water and use a toothpick to make a hole in the tomatoes so that they don’t burst when poured with boiling water.

    While the tomatoes are soaking, you need to prepare the dishes for preservation. Wash jars of the required volume thoroughly and sterilize using one of the convenient and proven methods: in a water bath, in the oven or microwave, wash the lids, boil and dry.

    Peel the carrots, if they are young, rinse them well, cut into large pieces or circles. Cut the bell pepper into rings. Peel the horseradish root and cut into small pieces. Peel the onion and cut into rings. Peel the garlic cloves.

    Greens for preservation: I used horseradish leaves, sprigs of parsley, dill - wash thoroughly and dry with paper towels. You can use other seasonings and pickling herbs to taste.

    Place some of the greens, garlic cloves, pieces of horseradish root, carrots and bell peppers into sterile jars. Place a row of green tomatoes tightly on top, then another row of herbs and other vegetables. And so fill all the jars up to the hangers.

    Boil water in a kettle and pour boiling water over the vegetables in the jar completely, cover the jar with a sterile lid and leave for 20 minutes.

    Then drain the water, pour a new batch of boiling water over the tomatoes and leave again for 20 minutes. Pour the second water into the pan, add sugar, salt, and bring the marinade to a boil. Pour in the vinegar, let the marinade boil, turn off the heat.

    Pour the marinade over the tomatoes in the jars, add a few black peppercorns and a bay leaf to each jar. Roll up the jars with lids and turn them upside down, cover them with a blanket, let cool completely at room temperature. Store the preparations in a cool place. Bon appetit!

I started canning green tomatoes for the winter. I decided to roll up two one and a half liter jars using this recipe. I was glad that besides tomatoes there were other vegetables here. This means the preparation will turn out very tasty and aromatic! Before storing vegetables, I always sterilize jars and lids; it’s most convenient for me to do this by steaming. I also poured boiling water over it twice, but the tomatoes are still green, and the fruits themselves are large. I like the presence of herbs and spices, this will make the taste even more rich. And the brine is so spicy! The jars languished under my warm blanket for almost two days until they cooled completely. We'll try it in winter.

Canned green tomatoes are my husband's favorite pickle. But, I usually prepare mixed pickles. In the jar I put green tomatoes, cauliflower, cucumbers, hot and sweet peppers, celery, dill, and in the last jar (when there are few vegetables) and white cabbage. So you can fill the table with one three-liter jar before the arrival of uninvited guests.

I finally canned mixed vegetables yesterday. I cook according to the same recipe as for pickling cucumbers, only for a three-liter jar of spice * for 3. It looks something like this:
