    Start preparing the tomatoes. Suitable for pickling are small-fruited varieties with strong, hard fruits, such as “cream”, which will not become sour from long-term storage and the fermentation process. In some places, suitable tomatoes are sold under the name "pickling tomatoes." Wash them well in running water, place them on kitchen towels to drain.

    Peel the garlic and cut into slices. Wash the dill in running water and dry. Place a layer of dill, chopped garlic cloves, a few black and allspice peas, a washed hot pepper pod (you can cut it in half if you wish), and a bay leaf on the bottom of a cleanly washed salting pan. You can also add cherry and blackcurrant leaves, after washing them under running water.

    Now it’s the turn of the tomatoes: pierce each tomato from the side of the stalk several times; an ordinary wooden toothpick is perfect for this.

    Place a layer of tomatoes on top of the greens, cover again with dill and garlic, add a second layer, and so fill the pan until all the tomatoes are layered.

    Pour the prepared brine over the tomatoes with herbs and spices and cover with a plate. To keep the tomatoes in the water, you can put a light weight - just to press down, but not crush. The brine should come to the surface of the plate, covering all the tomatoes. Leave the tomatoes in the brine in the room for 2 days - after this time they will be ready, lightly salted.

    For further storage, the pan should be placed in a cold place - in the cellar, for example, covering the surface of the tomatoes with clean gauze, a small weight and a lid. Or place in the refrigerator if the pan is small. The tomatoes turn out tasty and aromatic, and are eaten very quickly. Bon appetit!

I had some cream tomatoes and wanted to pickle them so I could eat them now. I chose a recipe for soaked tomatoes in a saucepan for the winter. I fermented them in a plastic bowl with a lid. I cooked the brine in advance and cooled it. I chopped the tomatoes and placed them on top of parsley stalks and pieces of bay leaves. I added allspice, garlic and a few hot pepper rings. On the second day of exposure at room temperature, the brine became cloudy, and on the third day a specific smell appeared. Then I kept the tomatoes in the refrigerator for two more days. After this, a sample was taken. The tomatoes are sour and a little spicy. There is a slightly carbonated taste. We liked the tomatoes, they were delicious!
