STEP 1

How to make scrambled eggs in pita bread in a frying pan with cheese? Making a delicious breakfast is not at all difficult. To do this, prepare the necessary ingredients according to the list. It’s better to start by preparing the filling. Take large, choice eggs. If the eggs are small, you can take 5-6 pieces.
STEP 2

Grate the cheese on a coarse grater.
STEP 3

Wash the greens, dry and finely chop. For me it's parsley, a little dill and a couple of green onion stalks. You can also add your favorite greens: cilantro, spinach, young wild garlic, etc.
STEP 4

Now prepare the pita base. It’s better to take thicker and denser lavash so that it doesn’t spread from the wet eggs. You can also use a wheat roll. Cut 2 circles from the pita bread.
STEP 5

The first should be equal to the diameter of the frying pan, and the second slightly larger. Pita bread should be prepared last because it dries and cracks very quickly, especially at the edges.
STEP 6

Grease the bottom and sides of the pan with vegetable oil. Lay out the largest round sheet of pita bread to form sides.
STEP 7

Carefully break all the eggs onto the pita bread, one at a time, trying to keep the yolk intact.
STEP 8

Season the eggs with salt and pepper and top with most of the grated cheese.
STEP 9

Sprinkle most of the chopped herbs on top of the scrambled eggs, reserving a little to garnish the finished dish.
STEP 10

Place a second sheet of lavash on top, pressing it down with the edges of the lower lavash.
STEP 11

Place the pan over medium heat and cook, covered, for about 5 minutes. The bottom of the pita bread should brown, the eggs should set, and the cheese should melt.
STEP 12

Carefully turn the pita bread over to the other side. Sprinkle the browned top with the remaining cheese.
STEP 13

Place the lid back on the pan, turn off the heat and let the eggs sit for 5 minutes until the cheese melts.
STEP 14

Place the finished scrambled eggs in pita bread on a plate, sprinkle with chopped herbs and serve immediately, cutting into pieces. Bon appetit!
