    Pour the flour and a pinch of salt into the bowl of the food processor, add the cold butter cut into cubes. Grind into crumbs with quick movements.

    Add an egg to the butter crumbs. Mix.

    If the crumbs are not moist enough, add cold water and knead the dough.

    Place the dough on a work surface and roll it out into a layer 3-4 mm thick.

    Place the dough in the mold and refrigerate for 30 minutes.

    While the dough is chilling, let's make the filling.

    Finely chop the onion and fry in vegetable oil until soft. Add mushrooms cut into slices to the onion. Fry until the liquid evaporates. Add salt and pepper to taste.

    Chop the green onions and spinach, add 1 more clove of garlic if desired. Add the greens to the mushrooms and fry for 2-3 minutes. Remove the pan from the heat, the filling is ready.

    We take out the form with the dough from the refrigerator. Place a sheet of baking paper or foil on top of the dough, add a load (beans, peas) and place in an oven preheated to 180 C for 15 minutes.

    Place the spinach and mushroom filling on the bottom of the basket.

    To fill, mix cream and eggs, add salt and pepper. Grate the cheese on a coarse grater.

    Place cheese on the spinach filling, cut the cherry tomatoes into halves and place on top of the cheese. Fill the filling with filling and place in an oven preheated to 180 C for 30-40 minutes.

a picture, not a quiche! it looks so beautiful that it’s a pity to even eat it, it’s a pity that there’s no cross-sectional photo of it, I’d like to see how the spinach behaves in the quiche in the evening, I’d happily drink tea with it, it’s a pleasure! Why don't you count calories......

ELEPHANT, unfortunately, I didn’t have time to take cross-sectional photos. It is better to cut the quiche when it has cooled down, then the piece will turn out even, but while I waited for the quiche to cool down, all that was left was crumbs.
