    Pour the sifted flour and a pinch of salt into the bowl of the food processor, add the cold butter cut into cubes and grind into crumbs. If you knead with your hands, rub quickly so that the oil does not have time to heat up from your hands, do not achieve complete homogeneity, it’s okay if you come across pieces of oil.

    Beat 1 egg into the butter crumbs.

    Add 1 tbsp of cold water to the crumbs. l. knead the dough (I needed 3 tbsp, but you may need more or less).

    Gather the dough into a ball; no need to knead. Wrap the finished dough in film and place it in the refrigerator for 30 minutes, or preferably 1 hour.

    Let's start with the filling.

    Peel the onions and cut them into 4 - 6 pieces depending on size.

    Heat vegetable oil in a frying pan, add onion. Fry over medium heat, stirring occasionally until soft, about 20-30 minutes. Add salt and sugar to taste. (I add a pinch of sugar at the very beginning, so the onions begin to brown easier).

    Roll out the chilled dough and place it in a mold (diameter 22-24 cm). Prick the surface of the dough with a fork.

    Cover the top of the dough with parchment and fill the pan completely with beans or peas. Bake in preheated to 200 C with beans for 10 minutes, after 10 minutes remove the beans with parchment and bake for another 10 minutes.

    Preparing the filling. Add grated cottage cheese, 2 eggs, salt and pepper to the cream.

    Grate the cheese, chop the parsley and add to the cream mixture. Mix everything thoroughly.

    Place the onion filling in the sand base.

    Pour the filling on top and bake in an oven preheated to 180 C for about 30-40 minutes. The surface of the quiche should be well browned. Let the pie cool a little and serve! Bon appetit!

Exactly, but I thought it was my imagination. I add different onions to this quiche, green, shallots, and red, in short, everything I can buy from onions, all in the quiche. It turns out very tasty.
