You don’t have to grind the flakes, just leave them as is, then the structure of the pancake will be a little different, more crunchy. I usually make it with whole flakes, but this time I decided to try the option with flour. It’s delicious either way, decide for yourself.

    Break the egg into a bowl and beat it lightly with a fork. Add crushed flakes, kefir and baking powder. Mix everything until smooth. I would recommend adding a little extra salt, especially if the filling is sweet. A fresh pancake is good for a salty filling. If you are using whole flakes, leave the dough to rest for about 20 minutes. The flakes will swell and the pancake will turn out tastier.

I have already made oatmeal pancakes several times using different recipes. I liked this option the most. The pancake itself turned out to be even tastier than the filling, which was surprising for me. I had instant oatmeal, I ground it a little in a blender. There was no flour at all, but the flakes became much smaller. The dough kneaded very quickly. I fried the pancake in a wide frying pan; during the baking process it became fluffy and porous. Turned over without problems. I used mango for the filling; apricots are not in season right now. There was no grainy cottage cheese, but it was in the form of a paste in a glass. Then I realized that I should have waited for the pancake to cool completely; the heat made my cottage cheese a little runny. This did not affect the taste) The oatmeal turned out to be large and very filling, I only finished half of it. The pancake is delicious, tender, soft, you can’t feel the oatmeal. The fruit filling perfectly complements the pancake, and soft cottage cheese replaced the sauce) I think it is also advisable to place grainy cottage cheese on a cooled surface so that sourness does not appear. Oatmeal is the simplest, most delicious, satisfying and healthy breakfast. Everything fits perfectly in it, and you can choose the fillings to your liking. I took long-cooked oat flakes and did not chop them very finely. Instead of baking powder, I added a pinch of soda. I also added a teaspoon of erythritol to the dough (I have a sweet tooth). The frying pan was well heated and did not grease with anything. The result was a very tasty oatmeal pancake. I used homemade cottage cheese for the filling, and instead of peaches I added strawberries (frozen). It turned out very tasty, like a cake! Thanks for the simple and delicious recipe!
