  1. STEP 1

    STEP 1

How to make PP curd muffins? Prepare the necessary ingredients. Use cottage cheese with a fat content of 2-5%, this is the most optimal fat content for making baked goods. You can take any dried fruits (dried apricots, prunes). If the sweetness of dried fruits is not enough, you can add any sweetener you wish.

  2. STEP 2

    STEP 2

Rinse the raisins well and soak them in cold water for 5 minutes to soften them. Then drain the water and dry the raisins well.

  3. STEP 3

    STEP 3

If the cottage cheese is coarse or grainy, rub it through a sieve or grind with an immersion blender until a soft, homogeneous mass is obtained. In this case, it is convenient to use cottage cheese packaged in packs; it has a smooth structure.

  4. STEP 4

    STEP 4

Chop the nuts with a knife. Choose the degree of grinding as desired. You can leave larger pieces or grind them into crumbs.

  5. STEP 5

    STEP 5

In a suitable sized container, beat the eggs with a whisk until smooth.

  6. STEP 6

    STEP 6

Add the pureed cottage cheese, mix thoroughly until the lumps disappear.

  7. STEP 7

    STEP 7

    Pour in milk, stir.

  8. STEP 8

    STEP 8

In a wide bowl, combine dry ingredients: corn and rice flour, baking powder, vanilla. Mix everything and sift through a sieve to enrich the flour with oxygen. This will make the finished cupcakes more porous.

  9. STEP 9

    STEP 9

Add sifted flour to the dough and mix.

  10. STEP 10

    STEP 10

Add raisins and chopped nuts, stir.

  11. STEP 11

    STEP 11

The dough turns out viscous and quite thick.

  12. STEP 12

    STEP 12

Pour the batter into portioned molds, filling them 2/3 full, as the cupcakes will rise during baking. If you wish, you can sprinkle peanuts on top of the cupcakes. Instead of small ones, you can bake one large cupcake.

  13. STEP 13

    STEP 13

Bake the curd muffins in an oven preheated to 180C for 25 minutes until golden brown. Do not overcook the muffins, otherwise the crust will be too dry.

  14. STEP 14

    STEP 14

Let the finished baked goods cool completely and serve. Bon appetit!

Using homemade cottage cheese, I prepared breakfast according to the recipe for PP cottage cheesecake in the oven. It’s funny, of course, but there is neither rice nor corn flour at home) But there is a way out of the situation. I have rice, which I washed, dried with a paper towel and ground in a coffee grinder. And the rice flour is ready! I replaced corn flour with soy flour. Instead of raisins, I took dried cherries, which added sourness and aroma to the dessert and added 10 grams. sugar. I decided not to divide into small cupcakes, but baked them in one form. The baking time took me 50 minutes. And, breaking the rules of the PP, I poured a small amount of glaze on the cupcake for beauty. The result was a delicious and beautiful curd and cherry dessert for breakfast!

The cupcakes turned out very tasty! I made it for 12 pieces, a pack of cottage cheese 180g was enough. So pleasant, fluffy, and it’s not at all sad that they are sugar-free - they’re just delicious!
