Let's keep the nostalgia to ourselves and start preparing pancakes for our schoolchildren, and not only. Sour doughs are great for delicious pancakes with cottage cheese. It’s better to keep an eye on the yeast (so that it doesn’t escape), and the result is holes and openings, a countless number of them, the pancakes are tender, soft, porous, gratefully absorbing sauces and fillings soaked in flavor. There is also a kefir option. Sour milk, ayran, matsoni, yogurt, tan will do. The sour taste of the dough is given by lactic acid bacteria. Both recipes contain eggs, sugar, salt, flour (not only wheat, but all types that we know). For thin “suns,” you need a cast-iron frying pan, a thin layer of something poured on it, and patience while the “base” sits. Non-yeast flour needs 2 hours to ferment. For the perfect filling, not only cottage cheese is used. Egg yolks, sugar, vanilla, and sour cream are added to it. For smoothness, you can grind it through a sieve or blender. The result is real cream, and this dish goes to another level of culinary excellence. You can also add raisins and other dried fruits, nuts, jam or a piece of jam, chocolate, jelly, fruits and berries. The finished dessert is fried in butter or baked in cream in the oven.
