STEP 1
Ingredients for pancakes.
STEP 2
For pancakes, sift the flour and mix with sugar, mix well.
STEP 3
Divide the eggs into yolks and whites, set the whites aside, they will be needed a little later. Add the yolks and vanilla tincture (or vanilla sugar) to the flour.
STEP 4
Mix thoroughly, add milk in small portions, knead the dough. We remove it for 15-20 minutes to rest.
STEP 5
While the dough is resting, let's make the filling.
STEP 6
We rub the cottage cheese through a sieve. Add sugar (adjust the amount to taste). Scald dried apricots and candied fruits with boiling water and chop finely. Add to the curd mass. Mix thoroughly. The filling is ready.
STEP 7
For the dough, melt the butter and let it cool slightly. Beat the egg whites until foamy. Add melted butter and whipped egg whites to the dough.
STEP 8
Stir until smooth. If the dough turns out thick, add a little milk or water.
STEP 9
Pour a ladle of dough into a heated frying pan (for the first pancake, lightly greased with vegetable oil), distribute and fry on both sides until cooked. Thanks to the whipped egg whites, the pancakes are delicate and very airy.

While we fry the pancakes, you can let the sauce simmer.
STEP 11
To do this, pour all the ingredients into a saucepan and cook for 15-20 minutes. I boil it down twice. If you don’t have rum, you can replace it with cognac or just eliminate alcohol completely.
STEP 12
Fill the finished pancakes with filling. Place a tablespoon of curd filling on the pancake and place cherries on top.
STEP 13
Wrap it in an envelope, or simply roll it up into a tube.
STEP 14
Pour the sauce over the finished pancakes and serve. Bon appetit!
