    We rub the cottage cheese through a sieve. Add sugar (adjust the amount to taste). Scald dried apricots and candied fruits with boiling water and chop finely. Add to the curd mass. Mix thoroughly. The filling is ready.

    For the dough, melt the butter and let it cool slightly. Beat the egg whites until foamy. Add melted butter and whipped egg whites to the dough.

    Stir until smooth. If the dough turns out thick, add a little milk or water.

    Pour a ladle of dough into a heated frying pan (for the first pancake, lightly greased with vegetable oil), distribute and fry on both sides until cooked. Thanks to the whipped egg whites, the pancakes are delicate and very airy.

    To do this, pour all the ingredients into a saucepan and cook for 15-20 minutes. I boil it down twice. If you don’t have rum, you can replace it with cognac or just eliminate alcohol completely.
