Baked pancakes with cottage cheese and raisins

STEP 1
The pancakes will be the most ordinary ones with milk. The only thing is that the dough is a little thicker. It’s very tasty when the pancakes are thick, then after baking they are well soaked in butter and honey, and it turns out very tasty. Sifted flour. Milk at room temperature. Eggs category C1.
STEP 2
In principle, it doesn’t matter in what order you mix the products. I usually add salt, sugar, vanillin to the eggs and mix everything well. Then add all the flour at once and whisk well until smooth, so that there are no unmixed lumps of flour. Then milk.
STEP 3
Many people also advise letting the dough sit for 15-20 minutes so that the gluten will disperse and supposedly the pancakes will be more elastic. But I’ll tell you from my own observations, I don’t see much difference between the first and last pancake, so do as you wish. I do not do this. And I fry pancakes in a well-heated frying pan. Before the first pancake, it is better to grease the frying pan with some kind of fat.

This amount of dough makes 15-16 not very thin pancakes. But the consistency of this dough allows you to make thinner pancakes, just pour less into the pan.

These pancakes are even delicious on their own with jam or honey. And sometimes, immediately after frying, I grease each pancake with butter and sprinkle with sugar. Mmmmm delicious!!! Or you can make savory pancakes with mushrooms and simply bake them in butter. It's also very tasty.
STEP 8
For the filling, I use purchased 5% fat cottage cheese in packs. I washed and dried the raisins well. You can add sugar to taste, but since the pancakes will still have honey, you don’t need much. And raisins also provide sweetness.

I mix everything and the filling is ready.

I grease the pan in which I will bake the bottom and sides well with butter.

I stuff pancakes.

You can leave it whole, but I find it more appetizing!
STEP 13
There wasn't enough filling for 3 pancakes, I just put it on top. They will be baked and very tasty. Top with honey and butter. Place in a preheated oven at 180 degrees, bake until golden brown.

My pancakes took 40 minutes to bake. They are very hot, be careful not to burn yourself.
STEP 15
Let it cool a little and you can try it. Good both cold and warm. You can serve with or without sour cream. The main thing is to stop in time and not eat everything at once :)
