Chocolate pancakes with curd filling

Sift flour, baking powder and salt into a bowl
STEP 3

Add eggs one at a time, part of the milk, stir sugar until smooth and add the rest of the milk.
STEP 4

Add cocoa powder and vegetable oil to the pancake dough
STEP 5

Stir the pancake batter until the cocoa is completely dissolved. The dough turns out quite liquid. If necessary, adjust the consistency of the dough by adding more flour or milk. Leave the dough to “rest” for 10-15 minutes.
STEP 6

Pour the batter into a hot frying pan pre-coated with vegetable oil, bake the pancakes, turn the finished pancake over to the other side and finish baking for literally 1-2 seconds.
STEP 7

While the dough is resting, prepare the filling: carefully stir in the cottage cheese, sour cream, sand and a pinch of vanillin.
STEP 8

It would be a good idea to use a mixer for the filling.
STEP 9

Add raisins (and, if possible, walnuts) to the finished curd mass, stir only with a spoon
STEP 10

Place a portion of the filling on the edge of the pancake and roll it up
STEP 11

Pancakes can be topped with drops of melted chocolate and sour cream.
