STEP 1
How to quickly and easily prepare stuffed pancakes from choux pastry on kefir stuffed with cottage cheese and raisins, which are sure to please many for their wonderful taste? First of all, we prepare the necessary products for baking homemade pancakes according to a repeatedly proven recipe.
STEP 2
Start preparing the dough and break three chicken eggs into a large bowl and pour half a teaspoon of salt into it, then, breaking up the protein threads well, mix the eggs with a whisk until smooth.
STEP 3
Pour two to three tablespoons of sugar into the bowl with the egg mixture and stir.
STEP 4
Pour three tablespoons of vegetable oil into a bowl with the egg mixture and continue mixing all the ingredients.
STEP 5
Pour half of five hundred milliliters of kefir at room temperature into a bowl with the egg mixture and mix all the ingredients well.
STEP 6
Pour three hundred grams of premium wheat flour, previously sifted through a fine sieve, into a common bowl.
STEP 7
Thoroughly mix all the ingredients in a bowl together and prepare a homogeneous thick base for the dough.
STEP 8
Pour the remaining two hundred and fifty milliliters of kefir at room temperature into a bowl with a homogeneous base and mix all the ingredients together until smooth.

Pour two hundred fifty to three hundred milliliters of boiling water into a bowl with a homogeneous base in a thin stream, then mix all the ingredients together and knead the choux pastry to the required consistency.
STEP 10
Lastly, add half a teaspoon of baking soda to the bowl of choux pastry and mix all the ingredients, then set the bowl aside and let the dough rest for thirty minutes.

To prepare the filling, take a deep bowl, then put five hundred grams of fresh 5% cottage cheese into it and add one teaspoon of vanilla sugar.
STEP 12
Place one hundred and fifty to two hundred grams of sour cream in a bowl with cottage cheese, then take a blender and grind all the ingredients in the bowl until the curd mass is homogeneous.
STEP 13
Place one hundred grams of previously well-washed and towel-dried raisins in a bowl with the curd mass, then mix all the ingredients well and the filling is ready.
STEP 14
Before baking pancakes, take a suitable frying pan and place it on the stove, then grease it with a small amount of vegetable oil and heat it well.
STEP 15
Set the stove fire to a temperature slightly above medium and pour the required amount of dough into the heated frying pan, then fry the pancakes on both sides until lightly golden brown and place on a plate.
STEP 16
Place one full tablespoon of prepared curd filling with raisins on one edge of the pancakes.
STEP 17
Fold in the edges of the filled pancakes and roll them into tight rolls.

Place the cooked stuffed pancakes on a plate and serve.
