I love cottage cheese very much) I saw your recipe and decided to try to prepare cottage cheese filling for pancakes in a new way for me, previously I made it without eggs with sour cream. I chose homemade full-fat cottage cheese and homemade fresh eggs, because they are not heat-treated. Since we have a sweet tooth, I added 150 g of sugar. I stuffed the pancakes unleavened, not sweet, so it came out in moderation. Great idea to add vanilla sugar. One spoon is just right for this amount of cottage cheese. You can replace it with vanilla, but you can accidentally overdo it and then it will taste bitter. The result was an excellent filling - tender, homogeneous, tasty and aromatic. Everyone liked the pancakes with curd and vanilla flavor. Next time I'll try mixing it with cocoa)

My son wanted filled pancakes and I used Maria’s recipe as a filling: cottage cheese filling for pancakes. I had 5% cottage cheese. I put it in a deep cup, added sugar, vanilla sugar, and instead of an egg, I still added a tablespoon of sour cream and mixed well. It mixed wonderfully until smooth, no blender needed. I put a tablespoon of filling on the pancakes and rolled them into rolls. The ratio of cottage cheese and sugar in the filling is just perfect: not cloying, but not bland either. Everything is super delicious! Thanks for the recipe!

This, of course, is not for everybody. I would also add a little cinnamon to this recipe.
