  1. STEP 1

    STEP 1

How to make curd filling for pancakes? Prepare your food. Take the highest quality and most delicious cottage cheese, the taste of the entire dish will depend on this. The fat content can be any, but the fattier the cottage cheese, the tastier the filling will be. But the calorie content will also increase, keep this in mind. Cottage cheese should not contain vegetable fats; this also affects the taste.

  2. STEP 2

    STEP 2

I prepared the raisin filling. In general, you can add absolutely any dried fruit to it - prunes, dried apricots, dried cherries, cranberries. Choose seedless dried fruits. Nuts and chocolate, candied fruits, and coconut flakes are also good options. Choose the filling to your liking. Or you can leave the filling just curd, without additives. Rinse the raisins (or any other dried fruit) and pour boiling water over them - this will make them softer. Leave it on for 10 minutes.

  3. STEP 3

    STEP 3

While the raisins are steaming, start preparing the filling. Place the cottage cheese in a bowl, beat in the egg. Instead of a whole egg, you can use only yolks; you will need 2 of them. Add sugar and vanilla. I always add a pinch of salt to sweet dishes, it acts as a flavor enhancer.

  4. STEP 4

    STEP 4

Mix the ingredients. I had soft cottage cheese, so I stirred with a spoon. If the cottage cheese is grainy, be sure to punch it with a blender or rub it through a sieve - this will make the filling more uniform. If the cottage cheese is very dry, then add a spoonful of sour cream or heavy cream.

  5. STEP 5

    STEP 5

Meanwhile, the raisins were steamed well. Drain, place in a sieve, and then place on a paper towel to dry.

  6. STEP 6

    STEP 6

Add raisins to the curd mixture and mix well so that they are evenly distributed. Try the filling. One spoon of sugar was not enough for us, so I added more. It's a matter of taste here. The filling is ready. You can stuff pancakes with it.

  7. STEP 7

    STEP 7

I simply spread the filling onto the pancake and then rolled it into a tube. You can wrap it in an envelope, a triangle, or make a bag, there are many options.

  8. STEP 8

    STEP 8

Lightly fry the stuffed pancakes in butter and serve. Bon appetit!

There were a couple of half-eaten pancakes left that were lying around and no one wanted to eat them anymore. I decided to “give them a second life” by making a curd filling for pancakes. While I was soaking the raisins, I started working on the cottage cheese, since it was coarse-grained, and punched it in a blender as the author advises, along with eggs and sugar. Next, I added dry raisins to the curd mass, mixed them, spread them on pancakes, and rolled them into tubes. It turned out great, I fried some of it right away, and put a couple in the freezer; I think it’s very convenient to take it out and fry it when you want pancakes.
