Chocolate pancake roll with cream

STEP 1
How to make chocolate rolls with curd cream? The first step is to bake chocolate pancakes. Prepare the necessary products indicated on the list.

Beat two eggs into a deep bowl. Mix them with a whisk.
STEP 3
Pour in two glasses of water at room temperature, add sugar and salt, mix everything again until the bulk products dissolve.
STEP 4
Add sifted flour and cocoa powder. Add flour gradually and immediately whisk the dough. The original recipe indicated the amount of flour was 9 tbsp. Focus on the fact that the dough should turn out velvety and slightly viscous (about like very heavy cream). The amount of flour depends on its properties; focus on the consistency of the pancake dough. Leave the dough to stand for about 5-10 minutes, stir again.
STEP 5
Heat a frying pan with a thick non-stick bottom. To prevent the first pancake from turning out lumpy, grease the frying pan with vegetable oil using a silicone brush. Pour in a ladle of batter and spread it evenly over the bottom of the pan. Bake over medium heat for a few seconds to a minute.
STEP 6
Turn the pancake over and cook until fully cooked; this will take a little less time than the first side. Bake pancakes using all the dough this way. Cool the pancakes slightly.
STEP 7
Meanwhile, prepare the filling.
STEP 8
Place soft cottage cheese, two tablespoons of condensed milk and vanilla sugar into a deep container.
STEP 9
Beat with a mixer until a soft, homogeneous mass is obtained.
STEP 10
Place three pancakes in one row, overlapping each other.
STEP 11
Apply one tablespoon of curd cream evenly over the surface of the pancake and randomly add berry jam. I used blackcurrant jam.
STEP 12
Spread the jam lightly (not necessarily evenly).
STEP 13
Fold the edges of the pancakes on both sides, as in the photo.
STEP 14
Start rolling tightly from one edge.
STEP 15
Form into a roll.
STEP 16
Do the same with the rest of the pancakes and filling.
STEP 17
Decorate the finished rolls with fresh berries and sprinkle with powdered sugar. Serve immediately, or refrigerate for a while. I serve the treat right away.

This is what a cross-section of a roll looks like with a lot of filling (about 1.5-2 tablespoons of curd cream and 1 teaspoon of jam for 3 pancakes).

And this is what the dessert looks like in cross-section with less filling (1 tablespoon of cream, less than 1 teaspoon of jam).
