STEP 1
How to make jellied saury pie on kefir with potatoes? Quite simple and fast. First, prepare the necessary ingredients for the filling. You can replace the saury with any canned fish of your choice: pink salmon, tuna or mackerel. Remove kefir from the refrigerator in advance.
STEP 2
Remove the canned saury from the can and mash with a fork. If the canned food contains large bones and spine (these are usually found in large pieces of fish), then it is better to get rid of them.
STEP 3
Peel the potatoes and cut into thin slices. If you are not sure that the potatoes will bake well, you can first blanch or fry until half cooked.
STEP 4
Peel the onion, rinse and cut into half rings.
STEP 5
Now prepare the ingredients for the dough. Use the highest quality flour. Kefir is suitable for any fat content, but keep in mind that the exact amount of flour depends on the moisture content and fat content of kefir. I have kefir with a fat content of 3.2%. It is better to take large eggs. If the egg is small, take 2 pieces.
STEP 6
Beat the egg with a whisk until smooth. Wash the egg with baking soda first, as it may contain harmful bacteria.
STEP 7
Pour in kefir at room temperature. Add salt and stir.
STEP 8
Sift flour with salt and soda directly into the dough. It is important to sift the flour to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking. Mix thoroughly again. You may need a little less or more flour, use consistency as a guide.
STEP 9
The dough should be as thick as pancakes and without lumps. At the same time, the filling should remain on the surface and not sink. If the dough is too liquid, add more flour. If it is too thick, dilute with kefir.
STEP 10
Line a baking pan (Ø 18-20 cm) with parchment and grease it with vegetable oil (if you have a silicone pan, it is not necessary to grease it). Pour a third of the batter into the pan. Place potato slices on top, overlapping. Salt and pepper the potatoes.
STEP 11
Spread the onions on top.
STEP 12
Then canned fish.
STEP 13
Pour the remaining dough on top of the pie. Bake the pie in an oven preheated to 180°C for about 45 minutes until golden brown. The exact baking time will depend on your technique and the thickness of the cake.
STEP 14
Cut the finished pie with saury and potatoes into pieces and serve immediately. Bon appetit!
