  1. STEP 1

    STEP 1

We remove the ingredients for the pie (kefir and mayonnaise) from the refrigerator in advance so that they are at room temperature. Let's start by preparing the filling. Shred the cabbage thinly. Wash the carrots, peel and grate. Finely chop the onion.

  2. STEP 2

    STEP 2

Heat vegetable oil in a frying pan, add chopped onion, fry until transparent. Add grated carrots, fry for about 5 more minutes and add cabbage. Mix the vegetables, add salt and sugar and add water so that it covers the contents of the pan halfway.

  3. STEP 3

    STEP 3

If the cabbage is young, it will quickly become soft; if the cabbage is old, you will have to simmer longer. Therefore, we check the readiness of the cabbage and add water if necessary. Simmer the cabbage under a closed lid; when it becomes soft, remove the lid so that the excess liquid evaporates.

  4. STEP 4

    STEP 4

Prepare the dough while the cabbage cools. Pour kefir into a bowl, add mayonnaise (it will make the dough more tender, but you don’t need to add it), vegetable oil, a pinch of salt and soda. Stir and allow an alkaline reaction to occur when the soda and kefir interact.

  5. STEP 5

    STEP 5

Pour in the flour, be sure to sift it, and add it not all at once, but in parts, thoroughly mixing the dough with a whisk so that there are no lumps left. The dough should be thick like rich sour cream. Let the dough rest for a while, meanwhile prepare the baking dish.

  6. STEP 6

    STEP 6

Grease the mold with oil, pour out part of the dough (a little more than half).

  7. STEP 7

    STEP 7

    Place cabbage filling on top.

  8. STEP 8

    STEP 8

Place the remaining dough on top, carefully spreading the dough over the entire surface, helping with a spoon. Preheat the oven to 180 degrees.

  9. STEP 9

    STEP 9

Bake the pie for about 25 minutes. So that it is well baked inside and does not burn on top, you can cover the pan with foil on top. If desired, the cake can be sprinkled with sesame seeds. Serve with tea or coffee. The pie turns out very tasty.

    Bon appetit!

It turns out that the dough turns out well even without eggs! And I learned this thanks to Snezhana’s recipe: eggless cabbage pie! I grated the carrots on a coarse grater, cut the onion into small cubes, and shredded the cabbage. I fried the vegetables in a frying pan and added a little water. For the dough, I mixed kefir, mayonnaise, vegetable oil, added soda and mixed. Then gradually added sifted flour and kneaded the dough, which turned out like thick sour cream. I poured half the dough into the mold, then put the filling and the dough again. I baked the pie at 180° for 30 minutes. Well, it turned out to be a very appetizing pie with a delicious filling! The recipe is now in my piggy bank. Many thanks to Snezhana for the recipe!

Tell me, can mayonnaise be replaced with sour cream?

Today I made cabbage pie according to your recipe. Replaced mayonnaise with full-fat sour cream. It turned out to be a very tasty pie with a thin, good dough. I’ve already tried several versions of jellied dough for pies with cabbage, but this version and another version of yours with the same proportions, but with eggs instead of sour cream, in my opinion, are the most successful. Thank you
