For shortbread pie with berries, store-bought dough is also suitable if you don’t have the time or desire to cook it yourself. Although there are recipes for truly speedy cooking, in which you just need to mix the chilled ingredients until smooth. And then keep the dough in the refrigerator for at least half an hour. Alternatively, the dough can be prepared in advance and stored in the freezer. Before use, just defrost it at room temperature.
Any dough is suitable: unleavened, rich, sweet and not so sweet. The only rule for delicious baked goods of this type is that it must be cold before rolling out. This way it holds its shape better.
Shortbread pie with berries can be made open or closed. In the first case, a basket with sides is prepared from the dough. It can be baked until half cooked, filling it with dry beans so that the bottom does not rise. Then the inside is filled with filling. For which you take fresh berries, blanched, frozen, gelled or boiled in sugar syrup.
Another option: the pie is cooked closed. To do this, the dough is rolled out into two layers. The first is placed on a greased baking sheet. There is a filling on top, which should not be too liquid. Everything is covered with a second layer on top. The edges are pinched and several punctures are made at the top with a fork. You can also brush with beaten egg white.
Filling: you can use any berries or a berry mix. The main thing is to strictly control its humidity. If there is too much juice, you can drain it. And prevent the release of new ones by rolling the berries in flour or breadcrumbs, which will absorb all the excess. If the filling, on the contrary, is too dry, it can be supplemented with a small amount of water.
