STEP 1

How to make a cherry pie? Prepare the ingredients for the filling first. You can take fresh or frozen cherries. If you choose the latter, defrost it in advance and drain the excess liquid.
STEP 2

Wash fresh cherries and remove seeds.
STEP 3

Melt butter in a frying pan. I advise you not to add all the oil at once, it is better to put half, and then, if necessary, add more. Place the prepared cherries in the pan, add vanilla sugar.
STEP 4

Simmer the berries, stirring, for about 5 minutes until the liquid and oil have partially evaporated. Keep in mind that the berries should not float freely in the liquid - the mass should be moderately thick. At the same time, you should not keep the cherries on the fire for too long: they should retain their shape.
STEP 5

Transfer the cherries to a baking dish (the cherries were very juicy and I thought there was a lot of liquid, so I removed the excess liquid with a spoon, so the filling now looks just right).
STEP 6

Prepare the ingredients for the test. Take the highest grade flour. Wash the eggs and dry with napkins. Wash the lemon, pour boiling water over it, dry it and grate the zest from it. Sift the flour, mixing with baking powder.
STEP 7

Beat the eggs into a bowl, add sugar and beat them into a fluffy foam.
STEP 8

Add lemon zest and sifted flour to beaten eggs. Add flour in parts, because you may need more or less of it than I did. Focus on the consistency of the dough.
STEP 9

Mix the dough with a mixer until smooth. Do this at low speed to avoid getting flour on everything. The dough should be fluid, not too runny.
STEP 10

Place the dough in the mold on top of the cherries so that the cherries are completely covered. Bake the pie in an oven preheated to 180°C for about 30 minutes. Determine the exact baking time and temperature based on your oven. Turn the finished pie over onto a plate so that the berries are on top.
