Most recipes for apple pies in the oven are prepared with yeast dough, usually butter dough. But you can also completely do without yeast if you knead the dough with sour cream, kefir, or take puff pastry, shortbread, or biscuit. Fortunately, the filling allows you to use almost anything.
We are dealing with sweet baked goods, so it is better to use sweet or sour apples. If they are too sour, it is better to lightly boil them in sugar syrup. Or sprinkle with powdered sugar. If you cut apples into slices, it is better to peel them.
You can use fresh fruits as a filling without subjecting them to heat treatment first. You can blanch them, especially if they are very hard. You can make puree, mousse, soufflé, marmalade, jam, preserves from them. Dried fruits are also quite suitable. You can cut into cubes, slices, circles, grate on a fine or coarse grater. If you mix it with ground cinnamon, the filling will come out more aromatic, so classic, traditional.
In addition to apples, the following can be added to pies as desired: raisins, nuts, pumpkin, cottage cheese, other fruits, berries. The molding shape can be any: classically oval, round, triangular, square, figured. Even a silicone mold for round muffins can be adjusted to ensure perfectly even cakes. These are good for the New Year and Christmas holidays, especially if there is cinnamon inside. Puff pastry allows you to make baked goods of any shape, even in the form of baskets filled with apple filling. And using unleavened dough, make something delicious for vegetarians, fasting people, or dieters - in any case, it’s better than drooling over a cake or pastry.
Remember: it is better to bake pies in an oven preheated to 180C, placing a baking sheet in the middle and turning on the upper and lower heaters or gas. For a nice gloss, they are coated with whipped egg white. For a more even, matte finish - use vegetable oil. The finished ones can be topped with glaze, cream, caramel, or fondant.
