Incredibly tasty, fluffy, soft, tender, airy! You can make rich yeast pies in the oven with any filling, sweet or savory. For me it's apples, raisins and sugar. They are baked in the oven, so they do not stain your hands with grease. They are convenient to take with you on the road, to work, or on a picnic.

    How to bake rich yeast pies? Prepare the necessary ingredients to prepare the dough. All products should be at room temperature. Take the highest grade flour. With it, yeast baked goods will be especially fluffy and voluminous.

    To activate the yeast, in a small bowl, combine 1 tsp. sugar, yeast and 50 ml of milk. The milk should be warm (35-38 degrees, no higher).     Sift the flour through a fine sieve into a suitable wide bowl. This will enrich the flour with oxygen, and the dough will be more lifting and fluffy.

    Melt the butter over low heat, cool slightly.

    To prepare the dough, take a wide and stable bowl so that it is convenient to knead the dough. The container must have the required volume and height so that the dough has enough room to rise. Beat eggs with salt until smooth.

    Add sugar and beat again.

    Add the appropriate yeast and the remaining milk, stir.

    Melt the butter in any way convenient for you. Cool it slightly and add melted butter to the dough. Stir.

    Add sifted flour. You can do this again through a sieve. Do not add all the flour at once. Depending on the properties of the flour, you may need a little more or less, check the consistency.     Then add flour in small portions, stirring the dough each time and observing its consistency.

    The dough turns out very soft and pliable. It may stick to your hands quite a bit. Don't try to fix this by adding flour as you won't end up with a stiff dough. This dough will take a long time to rise, and the baking will be heavy. Cover the dough with a towel and leave to rise in a warm place for 1.5-2 hours.

    Prepare the ingredients for the filling. You can make any filling for the pies. I settled on apple and raisin filling. Take the amount of sugar to taste depending on the sweetness of the apples. Clean the raisins from debris, rinse and dry.

    Wash the apples, dry them, remove peels and seeds. Cut the apples into small cubes.

    Add washed and dried raisins, sugar, cinnamon. Mix everything well.

    When the dough has increased in volume by 2-2.5 times, you can begin to form the pies.

    Gently knead the dough and place it on a table sprinkled with flour. Divide the dough into equal parts depending on the desired size of the pies.

    Roll each piece of dough into a round cake.

    Form the pie into the desired shape and pinch the edges well.

    Make all the pies this way. Place them on a sheet lined with oiled parchment, seam side down. Cover the pies with a towel and let them rest for 15 minutes.

    In a small bowl, beat the raw egg with a fork until smooth.

    Brush the tops of the pies with beaten egg.

Julia, thank you very much! We have never tried pies like these before! The pies are heroic, but when eaten, they melt in your mouth! I made it with potatoes, fried onions and mushrooms, and of course with apples, and tried it with thick jam. Everything turned out very, very tasty! The dough is amazingly soft, the pies look like they came from an assembly line! The husband said: “Write down the recipe, now only these!!!” I'm attaching a photo.

Lush, soft and delicious! Apple pies can also be prepared this way. The dough is yeast, but mixed with kefir.

Hello dear author. I wanted to make pies and was looking for a dough recipe and came across yours. Very simple, quick and tasty)) I made non-sweet pies, and put 2 tbsp in the dough. l. sugar, it turned out great)) I liked that there was a lot of filling, but not enough dough) The dough is very soft and airy, in general it’s just super)) thank you very much for the recipe))

Good evening! Thanks for the recipe! This was my first time baking pies. I always thought that yeast dough was very difficult! This recipe is very accessible and well and clearly described! I made the filling from eggs, green onions and rice. I think, by and large, you can make them with any filling.
