Small pies for a buffet table
Step-by-step preparation
STEP 1

Prepare your ingredients. Puff pastry is suitable either with or without yeast. Remove the frozen dough sheets from the package and leave them at room temperature for a few minutes, then separate the sheets from each other and leave them for another 1.5 hours to defrost.
STEP 2

Prepare the apple filling. Take apples that are juicy, sweet and sour. Wash them, dry them and cut them into small cubes. Place in a bowl, add 1 tbsp sugar. l. (or sweetener) and cinnamon. Stir. White regular sugar can be replaced with cane sugar, the taste and aroma of baked goods will acquire caramel notes.
STEP 3

Both fresh and frozen cherries are suitable for the cherry filling, as long as they are pitted. Place the frozen fruits in a colander and allow the juice formed from defrosting to drain. Fresh cherries should also be squeezed out of their juice. Transfer the fruit to a bowl, add corn or potato starch and the remaining sugar. Stir.
STEP 4

Roll out the dough into a thin layer (2-3 mm thick). Using a heart cutter (if you don’t have one, use a regular glass) cut out the hearts.
STEP 5

To prevent the baked goods from burning, cover the baking sheet with oiled parchment paper. Place half of the hearts at some distance from each other so that they do not stick to each other during baking. Place skewers on the hearts (I shortened the skewers slightly for convenience), lightly press them into the dough.
STEP 6

Place the filling on the hearts.
STEP 7

Cover the top with the other half of the hearts and run a fork around the edges, pinching the edges tightly so that the filling does not leak out.
STEP 8

In a small bowl, lightly beat the egg with a fork. Using a pastry brush, brush the surface of the pies.
STEP 9

Bake for about 15-20 minutes in an oven preheated to 180 degrees (10-20 minutes before cooking). The finished pies will have a golden brown crust, remove them from the oven and be sure to let them cool slightly to distribute the moisture evenly. Sprinkle powdered sugar on top if desired. Serve with tea or coffee. Bon appetit!
