Turkish pies with apple

STEP 1

DOUGH: Mix plain drinking yogurt, fresh warm milk, egg white, salt and sugar. Mix everything well until the mass is homogeneous. Next, mix the flour and baking powder separately and add to the liquid ingredients and mix. Add soft butter to the resulting mass, mix everything well again. Use your hands to knead into a smooth, pliable dough. Then roll the resulting dough into a ball and leave it to rest under the lid. In the meantime, you can start filling.
STEP 2

FILLING: Grate a medium-sized peeled apple weighing about 200 grams on a coarse grater. Add lemon juice to the grated apple and stir. Melt butter in a saucepan. Add sugar and honey to the butter and mix. Cook, stirring until the sugar dissolves. Add grated apples with lemon juice to the resulting mass. Simmer until all the liquid has evaporated. Finally add cinnamon, stir and remove from heat. Cool the filling.
STEP 3

PIES: Divide the rested dough into 6 parts, roll each part into a ball. Leave the balls under the film to rest for 15 minutes. Then roll out the ball into a circle. Make one cut on the circle from the center to the edge, place about one teaspoon of filling on one side. Roll the dough with the filling in a circle carefully and gently pinching the edges. Finally, use your hands to shape it into a dome. Brush the pies with glaze made from mixed egg yolk and milk.
STEP 4

Bake in an oven preheated to 200 degrees for 20 minutes on the bottom shelf. But you still need to focus on your oven. After all, they are all so different! The pies should have a golden crust on the outside and under no circumstances remain raw on the inside; you can use a wooden skewer to check the internal condition of the pies. The finished pies can be removed from the oven and covered with a clean towel for 5-10 minutes. Bon appetit!
