  1. STEP 1

    STEP 1

How to bake pies with cabbage and apples? First prepare the filling. It can be made from fresh or sauerkraut, or combine both types. Keep in mind that pickled vegetables will take longer to cook than fresh ones. Sourish varieties of apples are well suited for fresh cabbage filling, and low-sweet varieties will perfectly complement sauerkraut.

  2. STEP 2

    STEP 2

Grate the pre-peeled carrots on a coarse grater.

  3. STEP 3

    STEP 3

Chop the cabbage into thin strips.

  4. STEP 4

    STEP 4

In a frying pan with added vegetable oil, fry the carrots, stirring, for about 5 minutes. Carrots will give the filling a pleasant color and additional taste.

  5. STEP 5

    STEP 5

Place the prepared cabbage in the pan and stir. Simmer the cabbage over medium heat, stirring. When the cabbage becomes softer, add salt.

  6. STEP 6

    STEP 6

Simmer the cabbage until almost done. Add bay leaf, stir.

  7. STEP 7

    STEP 7

Peel and seed the apple and cut into small cubes. Sweet and sour apples like Simirenko or Granny Smith are suitable for fresh cabbage filling.

  8. STEP 8

    STEP 8

Place the chopped apple into the filling and stir.

  9. STEP 9

    STEP 9

Simmer the cabbage for approximately 5-10 minutes until the fruit is soft. The cooking time will depend on the quality of the vegetable and the characteristics of your stove. Cool the finished filling.

  10. STEP 10

    STEP 10

Prepare the necessary products for the dough. Warm the milk slightly to help the yeast work more efficiently.

  11. STEP 11

    STEP 11

For the dough, take a large bowl with high sides. Dissolve yeast and sugar in milk.

  12. STEP 12

    STEP 12

    Sift flour into yeast mixture.

  13. STEP 13

    STEP 13

Mix with a whisk until smooth. Cover the dough with a towel and leave in a warm place for about 20 minutes.

  14. STEP 14

    STEP 14

A fluffy yeast “cap” should appear on the surface.

  15. STEP 15

    STEP 15

Prepare the remaining ingredients for the dough. Take odorless vegetable oil. Be sure to sift the flour so that it is saturated with oxygen. Thanks to this, the dough will rise well and the baked goods will turn out fluffy.

  16. STEP 16

    STEP 16

    Beat the egg until smooth.

  17. STEP 17

    STEP 17

Add egg, sugar and salt to the dough. Stir.

  18. STEP 18

    STEP 18

    Pour in vegetable oil, stir.

  19. STEP 19

    STEP 19

Add most of the sifted flour and mix. Do not add all the flour at once; you may need less than the specified amount.

  20. STEP 20

    STEP 20

Add the rest of the flour gradually, while kneading the dough and observing its consistency.

  21. STEP 21

    STEP 21

Knead a homogeneous, soft, tender dough that almost does not stick to your hands. Cover it with a towel and leave it in a warm place to rise.

  22. STEP 22

    STEP 22

The rising time will depend on the activity of the yeast and the air temperature, so it may vary. It takes me about 70-90 minutes. It increased in volume by 2-2.5 times.

  23. STEP 23

    STEP 23

Gently knead the dough and place it on a table sprinkled with flour. Divide the dough into equal parts and roll into balls. Their quantity will depend on the desired size of the pies.

  24. STEP 24

    STEP 24

Roll each bun into a round cake.

  25. STEP 25

    STEP 25

Place the filling in the middle of the flatbread.

  26. STEP 26

    STEP 26

Lift the edges of the dough and press them together well.

  27. STEP 27

    STEP 27

Place the formed pies on a sheet covered with parchment. Cover with a light towel and leave to proof for 20 minutes.

  28. STEP 28

    STEP 28

When the pies have proofed, brush them with yolk mixed with milk.

  29. STEP 29

    STEP 29

Bake the pies in an oven preheated to 180 C for about 20-25 minutes until golden brown. Cooking time and mode may vary. Focus on the operating features of your oven.

  30. STEP 30

    STEP 30

Cool the finished pies a little and serve. Bon appetit!

My family loves pies with cabbage filling the most. That's why I cook them most often. But I’ve never made pies with cabbage and apples and never even tried them. I used about 280 grams of flour (high grade). Egg added category C1. The dough turned out very tender, soft, a little sticky to your hands. In 1.5 hours it increased approximately 2.5 times. I divided the dough into eight parts weighing 55-60 grams. For the filling I used young cabbage. I took the Golden apple variety, sweet and sour. I baked the pies for 20 minutes: 10 minutes on the bottom level of the oven and 10 minutes on the top. The pies turned out rosy, beautiful, and soft. I really liked the taste of the filling; the apples added a slight pleasant sourness. It turned out very tasty! Julia, thank you very much for the recipe!
