  1. STEP 1

    STEP 1

How to make fluffy pies with yeast and milk? Measure out the required ingredients. Take odorless vegetable oil. Milk is suitable for any fat content. Vanilla sugar can be replaced with vanillin (at the tip of a knife).

  2. STEP 2

    STEP 2

Sift the flour into a wide bowl with high sides. Sifting will saturate it with oxygen, which will help the dough rise easier and faster. And the pies will turn out fluffy and airy.

  3. STEP 3

    STEP 3

Warm the milk slightly. Combine yeast in a bowl, 1 tsp. sugar and about 70 ml of milk. Mix everything well and leave for 10-12 minutes to activate the yeast. A fluffy “cap” that appears on the surface indicates good quality of the yeast. If it does not form or rises very weakly, it is better to replace the yeast with others.

  4. STEP 4

    STEP 4

In a wide, large bowl, beat the egg with sugar, salt and vanilla sugar.

  5. STEP 5

    STEP 5

Pour in the remaining warm milk and stir.

  6. STEP 6

    STEP 6

    Add activated yeast, stir lightly.

  7. STEP 7

    STEP 7

Pour vegetable oil into the resulting mass and stir.

  8. STEP 8

    STEP 8

Add about 3/4 of the sifted flour. Do not pour out all the flour at once; you may need less than the specified amount. It is no longer possible to remove excess flour from the dough, but the deficiency can be corrected. Mix the dough first with a spoon.

  9. STEP 9

    STEP 9

Add the rest of the flour in small portions, while mixing the dough with your hands. Focus not on the amount of flour, but on the consistency of the dough.

  10. STEP 10

    STEP 10

Knead the dough. It turns out soft, pliable, almost does not stick to your hands. Cover it with a towel and leave it in a warm place to rise for 70-80 minutes. The rising time for the dough may vary slightly, depending on the air temperature and the activity of the yeast.

  11. STEP 11

    STEP 11

Prepare the filling for the pies. I made the apple filling with cinnamon and sugar. It is better to take sweet or sweet and sour varieties of apples. It is advisable that they are not too hard. For the filling you can take fresh fruits or berries, as well as jam or jam.

  12. STEP 12

    STEP 12

Wash the apples and dry them. Peel the apples and remove seeds. Cut the apples into small cubes.

  13. STEP 13

    STEP 13

Add sugar and cinnamon to the chopped apples and stir. Add the amount of sugar to taste. Cinnamon is also to taste and desired.

  14. STEP 14

    STEP 14

The dough has increased in volume by 2.5 times and is ready for cutting.

  15. STEP 15

    STEP 15

Gently knead the dough and place it on a table sprinkled with flour. Divide the dough into equal parts, the number of which will depend on the desired size of the pies. Roll each piece of dough into a log. Cover the buns with a towel while the pies are formed.

  16. STEP 16

    STEP 16

Roll each bun into a round cake.

  17. STEP 17

    STEP 17

Place the filling in the middle of the flatbread.

  18. STEP 18

    STEP 18

Bring the edges of the dough together over the filling and seal the pie. The pies can be formed into any shape.

  19. STEP 19

    STEP 19

Place the pieces on a parchment-lined baking sheet at some distance from each other. During baking, the pies will rise and grow in size. Cover them with a light towel and leave to proof for 15-20 minutes.

  20. STEP 20

    STEP 20

To grease the pies, lightly beat the egg and milk with a fork.

  21. STEP 21

    STEP 21

Brush the spaced pieces on top with the egg mixture.

  22. STEP 22

    STEP 22

Bake the pies in an oven preheated to 180 C for 20-25 minutes until golden brown. The baking time and mode may differ from those indicated; be sure to focus on the operating characteristics of your oven.

  23. STEP 23

    STEP 23

Allow the finished baked goods to cool. Serve lush pies with fragrant tea, tart coffee or milk. Bon appetit!

Today I made fluffy yeast pies with milk. For the filling, I finely chopped the apple and stewed the cabbage. I kneaded the dough with milk, taking all the other ingredients according to the list, except adding vanilla sugar. I put the dough in a pan and put it in a warm place for two hours. It turned out wonderful! Very fluffy and soft! The dough rose very well, filling the entire pan. I baked some delicious pies from it! Soft, airy, with a thin crumb and juicy filling. I recommend everyone to cook them! Thank you very much for the recipe!

Ruddy, fragrant pies are an integral part of the home menu in my family. I prefer to cook them with milk. They always turn out soft and very appetizing. An excellent addition to tea or coffee, perfect for an afternoon snack and as a “snack” for work. Thanks for the recipe!
