Grind the cottage cheese with 1 tablespoon of sugar, add the egg. Then soften the butter and grind the mass until smooth.

Mix soda and salt into the flour, then add in parts to the first mass.

Mix the dough. It will stick slightly to your hands. Place in cellophane and place in the refrigerator for 1 hour.

Option 1. Roll out the dough to about 0.5 cm thick. Using a glass, cut out circles.

Pour sugar into a bowl. Dip the dough circles in sugar.
STEP 7
Using the sugar side, fold the dough circle in half, pressing down with your fingers.

Fold the semicircle of dough in half again, with the sugar inside. Dip one side in sugar and place on a baking sheet, sugar side up.
STEP 9
Option 2. Roll out the dough into a layer as thin as possible, divide into 3 or 4 parts. Place them on top of each other, sprinkling them with sugar.

Roll out the resulting layers into 1 layer, sprinkle with sugar.
STEP 11
Visually divide the dough in half and fold the edges of the dough towards the middle 2 times. We put it together into a roll.

Cut the roll 1 cm thick.
STEP 13
Line a baking sheet with parchment paper and grease with oil. Lay out the cookies. Bake at 180 degrees for 20 minutes. The cookies should be browned.
