All foods stored in the refrigerator must be at room temperature, so they must be removed from it in advance. If there is no time for natural heating, then the margarine can be melted a little in the microwave or in a water bath. Place softened margarine in a bowl, add sugar and beat in a chicken egg.     Using a mixer, blender or hand whisk, mix the ingredients until the mixture is homogeneous in consistency. To add a pleasant aroma to baked goods and eliminate the specific taste of margarine, add a pinch of vanillin and mix again. Pour sifted flour combined with baking powder into a bowl with the mixture. Instead of baking powder, you can use baking soda, slaked with table vinegar, taken in equal parts - half a teaspoon each.

    Stir the mixture. Shortbread cookie dough made with margarine should be smooth and elastic. Mix the dough with a spoon first, then continue kneading with your hands. However, you cannot knead the shortbread dough for a long time, otherwise it will become hard and dense; the main task is to gather the dough into a ball. Wrap the dough ball in cling film and put it in the refrigerator for half an hour.

    After the specified time, remove the dough from the refrigerator. On a floured surface, roll it out into a layer no more than one centimeter high. Use special shaped molds or a glass to squeeze out the dough for future cookies.

    Grease a baking tray with butter or line it with baking paper. Place the cookie dough on a baking sheet and place in an oven preheated to 180°C to bake for about 12-17 minutes. Very simple composition and easy to prepare recipe for Homemade shortbread cookies with margarine! The dough is easy and pleasant to knead, doesn’t last long in the refrigerator, and bakes quickly. The cookies are crispy on the outside and soft on the inside. I added half the sugar to make them slightly sweet, and that’s what they turned out to be. The cookies rose perfectly, I didn’t even expect them to, and I forgot to add baking powder and just as I was rolling them into a ball, I remembered and sprinkled baking powder on the dough and kneaded it again.
