Step-by-step preparation
STEP 1

Remove seeds and membranes from the pepper and cut into cubes. Finely chop the onion, parsley and mint.
STEP 2

Pour 250 ml of boiling water over the couscous and cover with a lid. Leave for 5 minutes. Fluff with a fork. Combine all the prepared ingredients, pour in lemon juice and olive oil, salt and pepper. Mix.
STEP 3
