Stuffed squids in the Year of the Pig-Boar

STEP 1
Necessary products.
STEP 2
Prepare the squid: remove the insides along with the chord, cut off the tentacles and excess side parts of the tail, you can use them for another dish. Rinse the squid carcasses thoroughly.
STEP 3
Place the squid in boiling lightly salted water for 10 seconds. Cool immediately with ice water.
STEP 4
Peel the thin film from the squid.
STEP 5
For the filling, peel and finely chop the onion and mushrooms. Fry the onion in a frying pan with heated oil for 3-4 minutes, until golden brown and transparent. Add mushrooms. Fry for another 5 minutes on high heat and remove from heat. Boil the rice until tender, cool.
STEP 6
Mix rice with mushrooms and onions, salt and pepper. You can add mayonnaise. Stuff the squid, compacting the filling tightly.
STEP 7
Cut out triangles for “ears” and circles for “spots” from carrots. Punch two holes in the center of the “spots”. Attach “eyes” made from peppercorns and carrot parts to the piggy squids using mayonnaise. Transfer baby squid to lettuce leaves. Decorate the New Year's appetizer as desired.
