Also remove the egg to keep it warm. Instead of dry yeast, you can use fresh yeast, you will need three times more, 19 grams.

    Take a large bowl in which you will knead the dough. Heat the water to a temperature of 37-38 degrees (it will be pleasantly warm to the touch, but not hot). Pour it into a bowl. Add sugar and yeast to the water. Stir and leave to stand for 10 minutes.

    During this time, the yeast should be activated and rise to the surface with a foamy cap. If this does not happen, then take another yeast, this one is not suitable.

    Add salt to the yeast, beat in the egg, mix well. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.

    Start pouring flour into the bowl in portions, sifting it. It is important to sift the flour to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking. Stir the dough after each addition. First with a fork and then with your hands.

    When the dough can be kneaded with your hands, add soft butter to it. I didn't have time to take it out in advance, so I had to melt it. Continue kneading the dough, adding more flour if necessary. Be prepared that you may need more or less flour than indicated in the recipe. Look at the consistency, the dough should become quite thick, but not too steep.

    When the dough begins to pull away from the walls and becomes homogeneous, stop kneading. Not all the flour was gone, I had about 50 grams left. Cover the bowl with the dough with film or a towel and put it in a warm place to proof for 3 hours. I always put the bowl in the oven (not working!).

    Every hour, take out the bowl and knead the dough. It will increase in size nicely.

    Separate pieces weighing about 80 grams from the dough. Form them into balls. I got 8 pieces and a very small piece. Cover the pieces with film and leave to stand for 15 minutes.

    During this time, prepare the filling. Prepare ingredients for it and for the sauce. I took boiled sausage, pickled cucumber and cheese. You can add something of your own, depending on your taste and availability. For the sauce, take tomato paste and mix it with the same amount of water. Instead of pasta, you can use any ketchup or tomato sauce, which is what I did.

    Grate the cheese on a coarse grater. Any cheese is suitable for this dish - hard, semi-hard, soft, such as mozzarella. The main thing is that it is tasty, of high quality, without milk fat substitutes and melts well.

    Roll out the suitable balls into thin round cakes with a diameter of about 15 cm.

    Place the preparations on a baking sheet covered with parchment. I fit 4 pieces. Brush them with tomato sauce.

For me, this recipe turned out to be so successful and, I would even say, useful that it’s just oh! Tender, soft, pliable dough that bakes well and rises in moderation - pizzas from it are not too thin and not thick - they are comfortable to hold in your hands. The fillings can be changed to suit any taste. I cooked strictly according to the recipe, but I will definitely try it with other fillings. Even a sweet one will go great here with fruit. By the way, pickled cucumber fits in very well! So good that I would try to make classic pizza with it! Thanks for the School Pizza recipe!
