  1. STEP 1

    STEP 1

How to bake delicious pumpkin manna with kefir in the oven? Very simple! To begin, prepare the necessary ingredients according to the list. Take premium flour. Kefir is suitable for any fat content. Butter should be at room temperature, so remove it from the refrigerator in advance.

  2. STEP 2

    STEP 2

Pour semolina with kefir at room temperature and leave for 30 minutes to swell.

  3. STEP 3

    STEP 3

Peel the pumpkin from peel and seeds. Grate the pulp on a medium grater.

  4. STEP 4

    STEP 4

In a bowl, combine soft butter, eggs, lemon zest, sugar and vanilla sugar. Beat with a mixer until fluffy. The better you beat the eggs, the fluffier the manna will turn out.

  5. STEP 5

    STEP 5

Add swollen semolina with kefir and grated pumpkin. Whisk everything again.

  6. STEP 6

    STEP 6

Add the flour sifted with baking powder in parts and beat until smooth. Don't rush to add all the flour at once, as you may need more or less. Focus on consistency.

  7. STEP 7

    STEP 7

The dough should be thick but not tough.

  8. STEP 8

    STEP 8

Place the dough in a greased pan. There is a lot of dough, so choose the appropriate form for it. The size of my mold is 31 by 11 cm. Place the manna in an oven preheated to 180°C and bake for about 45-55 minutes until the skewer is dry.

  9. STEP 9

    STEP 9

While the manna is baking, prepare the mixture for soaking. Depending on how much juice you managed to extract from the lemon, adjust the amount of water so that the total volume of liquid is 100 ml. I got 45 ml of lemon juice and 55 ml of water.

  10. STEP 10

    STEP 10

Pour lemon juice and water into a saucepan. Add sugar. Place the mixture over low heat, bring to a boil and cook for 5 minutes. Then remove the saucepan from the heat.

  11. STEP 11

    STEP 11

Remove the finished manna from the oven and soak the top with lemon syrup. Let stand for about 15 minutes. Then transfer to a platter and serve. Bon appetit!

This was my first time baking with pumpkin. At first, when I mixed semolina with kefir, there were concerns that the dough would be thick. But I didn’t change anything in the recipe; I strictly followed the author’s advice. The dough turned out great, the right consistency, as described in the recipe. I baked it in a glass pan, so I put it in a cold oven. The only liberties I allowed myself were when cooking the syrup. I got about 100 grams of juice from one lemon, so I didn’t dilute it with water, and I took two tablespoons of sugar instead of 3. In my opinion, the dough was already sweet, so I decided to tone it down with the sourness of lemon. And how did I guess! I poured it over the pie right away, while it was hot, the syrup was sizzling, we could barely wait for it to start cooling. It had an amazing glossy lemon crust, it was just the icing on the cake! The cake turned out great, soft, fragrant, airy, slightly moist. Lemon comes in handy here. I recommend it, a wonderful simple recipe for cozy, homemade baked goods.

I'm not much of a cook, but I really love pumpkin. I was looking for a pie recipe that didn’t require pre-cooking the pumpkin. FOUND! The manna turned out sooooo delicious. Thank you very much for the recipe. The sourness of lemon is right on topic. I was a little confused by the consistency of semolina in kefir. But I didn’t deviate from the recipe and everything worked out! The juice from one lemon turned out to be 80 ml, but the taste only benefited from this. There was a fight over who would eat the top crust 😂 Be sure to try making this manna!!!

I wanted to bake something with pumpkin. The choice fell on this manna. Well, how delicious! Delicate, fluffy! I added 150g of sugar. and mostly cane brown. Pumpkin is a sweet variety for me. It turned out just right. I added 10 drops of mint tincture from the pharmacy to the finished impregnation. I poked it with a toothpick, soaked it, and put it in the switched-off oven to soak. I will bake again!
