If desired, you can add raisins or other dried fruits. Melt the butter in the microwave or in a water bath and cool.

    Pour room temperature kefir into a deep bowl; you can heat it a little in the microwave, but just a little so that it doesn’t curdle, 15 seconds at medium power is enough.

    Mix the ingredients thoroughly and leave for about 20 minutes at room temperature so that the semolina swells well and the mass becomes thick.

    In a separate bowl, beat the eggs with sugar. You can do this with a mixer or a whisk; the main task is to make the egg mixture homogeneous with the complete dissolution of sugar crystals. There is no need to whip until foam forms. Pour the egg mixture into the bowl with the semolina. Add melted butter.

    Add baking powder, a pinch of salt to balance the taste, a pinch of vanillin to give the cake a pleasant aroma. Using a spoon, gently stir the mixture until all ingredients are combined. The dough should have the consistency of thick sour cream. Leave the dough on the table to “rest” for another 15 minutes. Meanwhile, grease the bottom and sides of the manna baking dish with butter and sprinkle with semolina. Preheat the oven to 180 degrees.

    Mix the “rested” dough again and pour it into a pie pan (I have a pan with a diameter of 18 cm). Place the manna in the oven for about 30 minutes, depending on the operation of your oven and the volume of the mold. You can check the readiness of the manna with a wooden toothpick: insert it into the middle of the manna and take it out. It should be dry. Do not open the oven while baking the pie, otherwise the manna will settle. Watching the cake through the glass.

Then she poured the dough into a mold greased with vegetable oil and sprinkled with semolina. Bake at 180° for 35 minutes. Mm... it turned out delicious! Yesterday I prepared this wonderful manna. I was looking for a recipe so that I didn’t have to soak the semolina for a long time. It turned out VERY tasty, tender, crumbly, aromatic.
