Crumbly dough and delicate filling, what could be better? When I first saw the recipe for this galette, I immediately decided that I would definitely make it! And I was not mistaken, the galette turned out very, very tasty. The dough turns out to be very tender and crumbly, and the filling is simply weightless; cherries with their sourness also fit well here, but I think if there are no cherries, then currants, raspberries or strawberries will do. The galette turns out moderately sweet, so if you have a sweet tooth, add more sugar to the filling. Help yourself!

    Round the dough, put it in a bag and put it in the refrigerator for 1-2 hours.

    Rub the cottage cheese through a sieve, add egg yolk, sugar (if you have a sweet tooth, you can increase the amount of sugar), vanilla tincture (or vanilla sugar) and sour cream. Mix everything thoroughly.

    If your cottage cheese is wet, then add 1 tsp. (with a slide) potato starch, mix.

    Beat the egg white into a strong foam and add to the curd filling, mix gently.

    Take the dough out of the refrigerator. We put it on parchment (this will make it easier for us to transfer the finished biscuit to a baking sheet, or we can form it directly on the baking sheet).

    Roll out the dough into a circle with a diameter of 35-40 cm. Spread the curd filling on top, not reaching the edge about 5 cm. Place frozen cherries on top of the cottage cheese, having previously rolled them in flour.

    Bake the galette in an oven preheated to 180 C for about 30-35 minutes, until golden brown. Let the galette cool, sprinkle powdered sugar on top and serve.
