STEP 1
How to make pancakes with sausage and cheese? Prepare all the necessary ingredients. The milk, water and eggs must be at room temperature for the dough to turn out well. Therefore, remove them from the refrigerator in advance - 1-2 hours.
STEP 2
Wash the eggs with soap. In a deep bowl, beat eggs with sugar and salt. There is no need to whip until foamy. Then add milk and stir until smooth.
STEP 3
Sift the flour so that it is saturated with oxygen and the pancakes turn out airy. Pour more than half of the flour into a deep bowl, add soda there, stir. Make a well in the flour and pour the egg-milk liquid component of the dough into it. Mix with a whisk until smooth. Add the rest of the flour in small portions until it becomes difficult to mix.
STEP 4
You should get a homogeneous thick dough. Dilute it with water until you get the desired consistency. This means that you may need more or less flour than indicated in the recipe - keep this in mind.
STEP 5
The dough should be as thick as heavy cream. Leave the dough to rest for 10-15 minutes. If the dough is too thin, add a little flour until you reach the desired consistency.
STEP 6
Prepare the filling. Choose cheese that melts well when heated. Any boiled sausage that will be convenient to grate. You can omit the bell pepper and leave only the sausage and cheese for the filling, but with a vegetable additive the taste is more interesting.
STEP 7
Grate the cheese and sausage on a coarse grater. This will make the filling more tender and uniform.
STEP 8
Wash the bell pepper, remove the stem, cut it, peel the seeds and cut the entire pepper into strips. There should be 24 pieces in total.
STEP 9
Take a frying pan with a diameter of 22 cm - a pancake pan or one in which you are comfortable baking pancakes. Heat the pan until hot. Grease with vegetable oil. Pour some dough onto it and, turning and tilting it, distribute it over the entire bottom. Bake the pancakes over medium heat on one side until golden brown; do not brown the other side too much. Grease the pan with oil as needed if it starts to stick to the pan.
STEP 10
I got 14 pancakes. Proceed to filling the pancakes with filling. Place the pancake with the more fried side up. Place 2 peppercorns on the edge.
STEP 11
Wrap the pepper in the pancake a little, then place about a tablespoon of filling in the middle of the pancake, fold the edges, as if covering it, and press a little.
STEP 12
Gently roll the pancake with the filling tightly.
STEP 13
Roll all the pancakes this way.
STEP 14
Then fry them in butter on both sides over medium heat until golden brown. At the same time, the filling must warm up so that the cheese melts.
