You can make flour yourself by grinding the flakes using a coffee grinder.

    Combine soft butter with sugar, egg and beat with a mixer until fluffy. The mass should increase slightly in volume due to the egg. Buy high-quality, natural butter, without milk fat substitutes.

    Add cinnamon, vanilla sugar, nutmeg, baking powder and salt to the butter mixture. Whisk everything again.

    Sift oatmeal into the mixture, add oatmeal and mix everything until smooth. It is necessary to sift the flour. Firstly, it may contain unground or poorly ground particles, and secondly, during sifting, the flour is saturated with oxygen and the cookies will turn out more airy.

For cookies, it is better to use sour or sweet and sour apples, for example Semirenko or Granny Smith varieties, that is, apples with green skin. The tart apples will create a flavor contrast with the sweet dough and nuts, and the cookies will turn out especially delicious. But you can, of course, use any other apples you like.

Good day everyone! Our family really loves oatmeal cookies and I bake them often. That's why we buy oatmeal by weight - it turns out to be much more profitable. I usually grind oatmeal in a coffee grinder and mix it in various proportions with wheat flour. Having seen a recipe for oatmeal cookies with an apple without flour, I wanted to bake such cookies. Regular cereal is not instant, so I immediately crushed all the required amount of oatmeal into flour in a coffee grinder and mixed it with baking powder. Peeled the apples and cut them into small cubes. Replaced the oil with sunflower oil - 70 ml, because... We buy natural butter for sandwiches, but its price is too high, so we can use it for baking, but we don’t buy spread or margarine at all. Beat the butter, sugar and egg thoroughly with a whisk into an emulsion. I crushed the nuts in a blender, but not very finely - so that individual nuts could be found in the cookies. I mixed all the ingredients with a wooden spatula - it turned out to be a viscous and sticky dough. It was more convenient for me to put it with a tablespoon on a Teflon mat, and only then shape it with wet hands, rolling it into a ball and flattening it between your palms. This amount of dough was just enough for a baking sheet of cookies (11 pcs). The cookies were baked for 25 minutes. The result was a very beautiful, ruddy and aromatic cookie 🍪 with delicious cracks, moderately crumbly. Pieces of apples pleasantly set off the sweetness of the dough (the author very correctly noted that you need to use sweet and sour varieties). Cookies according to this recipe will probably turn out delicious, but there will only be gluten, since oats contain it, although in much smaller quantities than wheat. If a patient with celiac disease with high sensitivity to gluten eats such cookies, then, alas, they may end up in the hospital!
