Cinnamon Cookies
In many European countries and the United States, cinnamon cookies are considered a Christmas bake. It is prepared for Catholic Christmas to get into its spirit. The most important holiday of the year comes to the house along with the indescribable cinnamon aroma.
Ground cinnamon is added either to the dough or to the filling. In the first case, you can use any cookie recipe as a basis (although it’s better to play it safe and choose a special one). The most preferable option is shortbread dough, which rolls out well and holds its shape. You can make shaped cookies from this, and then decorate it with sugar or any other glaze. You can decorate a Christmas tree with these cookies if you thread ribbons through them.
The simplest but most delicious recipe for cinnamon cookies is this. You will need: flour, sugar, eggs, butter, baking powder, cinnamon. Mix all the dry ingredients with melted butter and beat in the egg. And knead a homogeneous dough. It should be thick and dense. Afterwards the dough is rolled out to a thickness of 5 mm. And cut out with molds. Place on a baking sheet or special baking sheet. Sprinkle with sugar mixed with vanilla (you can skip this step). And bake in a preheated oven for about fifteen minutes.
Cinnamon goes well not only with apples, but also with other fruits, berries, and vegetables. You can add to the cookie dough: grated carrots, pumpkin, pureed apricots, pears, cherries, bananas. And also zest from oranges, lemons, tangerines.
For the filling, cinnamon mixed with sugar is enough. You can add egg whites, ground nuts, and dried fruits to this mixture.
