    Then quickly knead the dough with your hands. Do not knead the dough for a long time. As the process takes longer, the butter that melts from the warmth of your hands will worsen the consistency of the dough, which will make the cookies less flaky and stiff. Wrap the finished dough in cling film and refrigerate for 1 hour.

    You can use spices for sprinkling sugar, depending on your taste. Instead of a spicy taste and aroma, you can make it vanilla by adding vanilla sugar to the sugar.

    Divide the chilled dough into 2 parts. Put one part back in the refrigerator, roll the other on a lightly floured table into a layer no more than 3 mm thick. In our family, everyone loves cottage cheese baking, and even more so, cottage cheese cookies with sugar) What interests me most is the process itself! Although I didn’t want to knead the two parts of the dough separately. I simplified this moment a little and beat all the ingredients in a blender, including soft butter. And then I added flour and kneaded the dough. I did all this in the evening so that I could bake my favorite cookies early in the morning) At the same time, the dough cooled well in the refrigerator. For the topping, I mixed sugar, vanilla sugar and cinnamon. Very fragrant mixture! The dough turned out elastic and pliable; I dusted the table with a little flour when it stuck. I baked the ears for exactly 20 minutes at 180° until golden brown. The cookies are simply amazing! Layered inside, crispy sugar crust on the outside. I also like that the dough for this recipe is not sweet. Thanks to this, the resulting cookies are not cloying. I advise everyone to try baking these delicious cottage cheese cookies!
