STEP 1
How to bake cottage cheese cookies with sugar? Measure out the ingredients needed to make the dough. They must be cold, this is important. Take soft cottage cheese so that the dough is more homogeneous.
STEP 2
Mix flour with baking powder, sift. This will enrich the flour with oxygen, and the cookies will rise well during baking.
STEP 3
Combine cottage cheese with egg and salt. It is convenient to use an immersion blender for this.
STEP 4
The resulting mass should be homogeneous, without lumps, and paste-like. Then the cookies will turn out more tender.
STEP 5
Combine cold butter with sifted flour with baking powder. Please note that you may need more or less flour than I did.
STEP 6
Grind the flour and butter with a blender until you obtain crumbly butter crumbs. You can use a food processor for this or simply grind everything with your hands. In the latter case, you need to do this quickly so that the butter does not melt from the heat of your hands.
STEP 7
In one container, combine the curd mass and butter crumbs.
STEP 8
Stir with a spoon first.
STEP 9
Then quickly knead the dough with your hands. Do not knead the dough for a long time. As the process takes longer, the butter that melts from the warmth of your hands will worsen the consistency of the dough, which will make the cookies less flaky and stiff. Wrap the finished dough in cling film and refrigerate for 1 hour.
STEP 10
You can use spices for sprinkling sugar, depending on your taste. Instead of a spicy taste and aroma, you can make it vanilla by adding vanilla sugar to the sugar.
STEP 11
In a rimmed plate, combine sugar and spices and stir.
STEP 12
Divide the chilled dough into 2 parts. Put one part back in the refrigerator, roll the other on a lightly floured table into a layer no more than 3 mm thick. Do not flour the table too much, otherwise the flour will not stick to the dough. Using a glass or a special notch, cut out circles with a diameter of 8-9 cm from the dough.
STEP 13
Dip each circle into the sugar mixture.
STEP 14
Then fold the circle in half with the sugar side facing inward. Dip the resulting semicircle into the sugar mixture again.
STEP 15
Fold the dough in half again so that the sprinkled side is on the inside. Place the resulting triangle on the sugar again, pressing slightly.
STEP 16
Form all the cookies in this manner. Place it on a baking sheet lined with parchment, sugar side up. Combine the dough scraps, cool slightly and also cut out the cookies. This proportion yields 28-30 cookies.
STEP 17
Bake the curd ears in a preheated oven at 190C for 20-25 minutes until golden brown. At the same time, be guided by the operating characteristics of your oven and, depending on this, adjust the baking mode.
STEP 18
Cool the finished cottage cheese cookies and serve. Bon appetit!
