    How to make cookies from yeast dough? Measure out the required ingredients. Take the highest grade wheat flour. Milk and sour cream are suitable for any fat content. Take out the sour cream in advance so that it is not cold. Warm the milk slightly.

    Sift the flour into a wide bowl with high sides. The flour will be enriched with oxygen and the dough will rise easily. It will turn out lush and airy.

    Melt the butter over low heat, cool slightly.

    In a small bowl, combine the yeast, 1 tsp. sugar and about half the milk, mix. Leave the yeast to activate for 10-12 minutes. A yeast “cap” should appear on the surface.

    In a large bowl, dissolve salt, sugar and vanilla sugar in warm milk.

    Add sour cream, stir.

    Pour in the yeast mixture and stir lightly.

    Add sifted flour to the resulting mixture. Do not pour out all the flour at once; you may need less. It depends on the properties and quality of the flour used.

    Stir the mixture first with a spoon. Add the rest of the flour in small portions, while mixing the dough with your hands. Do not add a lot of flour so that the dough does not turn out stiff.

    The dough should be soft, pliable, and not sticky to your hands. Cover the dough with a towel or cling film and leave in a warm place to rise for about 1.5 hours.

    The dough will increase in volume by 2-2.5 times.

    I made cookies with two fillings: cinnamon and poppy seeds.

    Combine a little sugar (1.5-2 tbsp) with cinnamon and stir. Add the amount of spice to taste.

    Gently knead the dough and place it on a table lightly sprinkled with flour. Divide the dough into 2 parts. Roll out one piece of dough into a rectangle, the size of which will depend on the desired size of the cookies. Divide the dough into equal square or rectangular pieces.

    Dip the formed cookies into sugar. You can roll the cookies on all sides or just on top.

    Do the same with the rest of the dough. Lightly grease each part of the dough with vegetable oil, sprinkle with sugar and poppy seeds.

    Form cookies with poppy seed filling. Dip the top into sugar.

    Place the cookie blanks on a parchment-lined baking sheet at some distance from each other. Cookies do not require proofing, so bake them right away. All my cookies didn’t fit on one baking sheet.

    Bake yeast cookies in an oven preheated to 180C for 20-25 minutes until golden brown. Determine the cooking time taking into account the operating characteristics of your oven.

A detailed recipe always makes the work much easier and simpler; this is very important, especially for busy people. I don’t like cinnamon, but I do like poppy seeds, so I only have poppy seeds. Thanks to the shape of the cookies, like tubes, it was convenient to place them on the sheet. The yeast dough cookies themselves are soft, tender, and moderately sweet.
